Carrot-Egg Fried Rice

No..this is not for an event..this is for me n my hubby dear...Carrots...Huhhhhh...Apart from Carrot Halwa, this fried rice is the only way thru which my mom was able to stuff this healthy veg into my diet...I had a couple of left over carrots and some rice from previous day..So I decided to make this dish on my own now....I never take an initiative to cook carrots....anything with carrot...Suman has to do that....

Coming to the recipe, it's simple n easy...

Left over rice - 2 cups
Carrots - 2 grated
Peas - 1/2 cup boiled (optional)
Green chillies - 3 chopped
Cumin - 1 tsp
Eggs - 2
Oil - 4tsp
Pepper powder - 1/2 tsp (optional)
Coriander - 2 strips chopped


1. Heat oil in a pan. Add the cumin seeds and chopped green chillies. Roast for 1min.
2. Add the grated carrot and boiled green peas. Roast for 3-4 min.
3. Break the eggs and drop over. Mix well and roast for another 5min.
4. Add salt, pepper powder and mix well.
5. Finally add the rice and let it cook for 2-4min. Remove from heat.
6. Garnish with coriander and serve.

Great to see a post which is not for an event. Too many events to handle.
NIce looking carrot-egg fried rice. Will try sometime when my fridge is empty...n weekend grocery shopping is still pending..

I like this dish...and as everyone has been saying- it's getting rather tiresome cooking for events.I am trying to stay away and do my own thing & only participate when what I have made fits in with whatever event is going on :-)
I too do not use carrots a lot in my cooking and buy it rarely but I bought a bag last week & I'm wondering wht to do with it.
